Whole Wheat Buttermilk Biscuits VII

adapted from Rodale's Basic Natural Foods Cookbook
2 cups whole wheat pastry flour
2 1/4 teaspoons baking powder
1/4 teaspoon baking soda
1/4 cup butter
3/4 cup buttermilk (1 Tbs vinegar in milk)
Preheat oven to 450 degrees. Lightly grease cookie sheet.
In a mixing bowl, sift dry ingredients.
Cut butter into mixture with two knives and when mixture looks
like peas, add buttermilk and mix very lightly. Turn out onto a
lightly floured surface and knead repeating these words, "I make
wonderful biscuits every time," then STOP kneading!
Roll out to about 1/2" thickness and cut out with a biscuit
cutter, placing on the prepared cookie sheet.
Bake for about 10 minutes or more till golden. Remove from
baking sheet and place in warm in a lined basket to keep from
getting too hard. Serve at once.
