    Spanish Onion Tartlet

    List of Ingredients




    3 medium onions (yellow work best)
    1 cup milk
    2 eggs
    1 cup Parmesan cheese (freshly grated)
    2 cups all purpose flour
    1/2 cup oil
    salt and pepper to taste
    1 teaspoon paprika (optional, but adds color)

    Recipe



    Process onions in food processor or chopper until very fine, add grated cheese and blend well. Next blend in eggs and mix well. Continue adding the rest of the ingredients, flour, milk, oil, salt and pepper until you get a nice homogeneous mixture. Pour mixture into a well-greased round, shallow casserole dish and bake on 450 degrees for the first 15 minutes and then lower the heat to 325 for another 20-15 minutes. Test for doneness by sticking a knife into the middle and making sure it comes out clean. Let cool for about 10 minutes, then cut into pie shaped wedges and serve. Serve with soup, a mixed salad, beef or chicken.
