    Cucumber Relish

    2 medium cucumbers, peeled, seeded and cut in half lengthwise,
    then cut crosswise into 1/4-inch-thick slices
    1/4 cup rice-wine vinegar
    2 Tbs thinly sliced fresh basil
    2 tsp sugar
    1 tsp kosher salt
    1 tsp grated lime peel
    1 tsp grated fresh ginger
    1/4 to 1/2 teaspoon red pepper flakes



    Stir together all ingredients in a medium bowl until well combined. Let stand 15 minutes.
    Serve with slotted spoon.

    Makes 2-1/2 cups
