    Sun Dried Tomato Pesto

    1 jar sun dried tomatoes, packed in oil (8 1/2 oz)
    2 cloves garlic, or more to taste
    1 cup flat leaf parsley, washed and stripped from stems
    1/2 cup basil leaves, washed and stripped from stems
    1/4 cup Regiano Parmesan cheese, shredded
    1/4 cup pine nuts (walnuts or sunflower seeds)
    red pepper flakes, to taste
    salt, to taste
    olive oil, as needed

    Pulse sun dried tomatoes (including oil), garlic, cheese, nuts, pepper, and salt
    to a rough chop in food processor. Add parsley and basil; pulse to desired
    constistency. If necessary, add more oil.
