    1 1/4 cups all-purpose flour
    1 1/2 tsp cinnamon
    1 tsp baking powder
    1 tsp baking soda
    1/2 tsp ginger
    1/2 tsp salt
    1/4 tsp freshly ground pepper
    1 large egg
    2/3 cup granulated sugar
    1 cup canned pumpkin
    1/3 cup vegetable oil
    1 tsp vanilla extract
    1 can (8 oz.) crushed pineapple in juice
    1/2 cup raisins

    Icing
    3/4 cup confectioners' sugar
    3 to 4 tsp 1 percent low-fat milk
    1/4 tsp grated orange peel
    1/4 tsp vanilla extract

    Recipe



    Heat oven to 350 degrees. Lightly coat a 13x9-inch baking pan with vegetable cooking spray.

    Combine flour, cinnamon, baking powder, baking soda, ginger, salt and pepper in a bowl. Whisk together egg and granulated sugar in another bowl. Whisk in pumpkin, oil and vanilla until smooth. Stir in pineapple, then flour mixture, just until blended. Stir in raisins. Spread batter evenly in prepared pan. Bake 33 to 35 minutes, until a toothpick inserted in center comes out clean. Cool in pan on wire rack. Make icing: Whisk together all ingredients in a bowl until smooth. Spread top evenly with icing. Let stand 1 hour until set. Cut into twenty-four 3x1 1/2-inch bars.

    Makes 2 dozen bars.
