    Spinach Marinara Sauce

    1/4 cup olive oil
    1 onion, chopped
    3 cloves garlic, minced
    1/3 cup grated carrot
    10 oz frozen chopped spinach, thawed, drained
    12 oz tomato paste
    4 oz can sliced mushrooms, drained (8 oz fresh, sliced)
    2 Tbs salt
    2 Tbs oregano
    2 Tbs dried basil
    1 Tbs crushed red pepper or to taste
    28 oz can peeled and crushed tomatoes with liquid

    Combine all ingredients in crockpot. Cover, cook on LOW for
    6-7 hours.
