Cranberry Frost
List of Ingredients
1 cup fresh or frozen cranberries, finely chopped
1/3 cup sugar plus 3 Tbs
2 medium oranges
1 8 oz pkg cream cheese, softened
2 tsp vanilla
1 medium apple, finely chopped
1/2 cup chopped dates
1 cup whipping cream
Recipe
Combine cranberries and 1/3 cup sugar; let stand for 10 minutes. Meanwhile, peel and section one orange. Chop orange, reserving juice, and set aside. Squeeze remaining orange to make a total of 1/3 cup orange juice. Beat together the juice, cream cheese and 1 tsp vanilla until fluffy. Whip whipping cream until soft peaks form, gradually adding remaining vanilla and sugar. Fold whipped cream mixture into cream cheese mixture. Add remaining ingredients and mix lightly. Turn into a 5 cup mold, 8x4x2 inch loaf pan, or 8-9 individual molds. Cover with plastic wrap or mold covers. Seal, label, and freeze at least 3 hours. Can leave in freezer up to one month.
Before serving, let the unmolded dessert stand at room temperature for 15 minutes to soften slightly.
