    Rhubarb Crunch

    Crumb topping
    1c.sifted flour
    3/4c. uncooked rolled oats
    1c. firmly packed brown sugar
    1/2c. melted margarine
    1t. cinnamon
    mix together until crumbly. Press half of the mixture into a greased 9" square pan.
    Fruit
    4 c. sliced rhubarb
    1c. sugar
    2 TBSP cornstarch
    1c. water
    1 tsp. vanilla
    1/2 tsp orange peel
    Combine the above and cook over med heat, stir until this thickens. Pour fruit over the crumbs, and top with the remaining crumbs. Bake @ 350 about 30 min. It is great with ice cream, or whipped cream.
