Tori's Apple Cobbler
List of Ingredients
3 cups Winesap apples, cored and sliced into 1/4 inch thick slices
3 Tbs. maple or rice syrup (white sugar)
1/3 c. unsweetened apple juice (orange juice)
3/4 c. whole grain flour
1/4 tsp. baking powder
1/2 c. shortening (butter)
1/2 c. maple or rice syrup (white sugar)
1 egg
1/2 tsp. vanilla extract
Recipe
Preheat oven to 375 degrees .
In an ungreased 8 inch baking or pie dish, mix apples, 1/3 c. juice and 3 Tbs. syrup (sugar). Set aside. In small bowl, mix flour and baking powder. Set aside.
In medium bowl, mix shortening and sweetening until light and fluffy. Beat in egg and vanilla. Add flour mixture, a little at a time, until ingredients are just mixed. Drop by spoonfuls on top of apple mixture. Sprinkle with cinnamon or nutmeg if you wish.
Bake in preheated oven for 35 to 40 minutes, until topping is golden.
4 generous portions or 6 regular portions.
