EZ Paella

2 five-oz. pkgs. of Mahatma or Vigo brand yellow rice
4-oz. German sausage, diced
1 pkg. (6-oz.) Crab Delites, cut into 1/2 inch cubes
1 pkg. (6 to 8-oz.) small salad shrimp
1 skinless, boneless chicken breast, cooked
1/2 cup white onion, diced
1/4 cup green bell pepper, diced
1/4 cup red bell pepper, diced
Olive oil
Garlic powder
Black pepper
In heavy saucepan, prepare rice according to directions.
Meanwhile, boil chicken breast until done. Remove from heat and chill.
Cut into 1/2-inch cubes. In non-stick fry pan, sauté white onion in
1-Tablespoon olive oil until transparent. Add red and green pepper and
cook together for additional 2 minutes; stirring constantly. Remove and
set aside.
Sauté chicken cubes in 1-teaspoon of olive oil, sprinkling with garlic
powder and black pepper. Toss rice and vegetables together, add
chicken, shrimp, sausage, and crab. Stir together until well mixed.
May be served either hot or cold; serves
4 as main dish, 6 to 8 as side dish.
