Greek Orzo Salad
List of Ingredients
English cucumbers
Tomatoes (firm)
Green peppers
Red peppers
Yellow peppers
Purple onions
Olives
Orzo
Feta cheese
Parsley, optional
Recipe
Use 1 of each vegetable, except onion.
Boil about 2 cups of Orzo for ten minutes. While orzo is draining, mince the vegetables, starting with the peppers, then cucumbers. . Add the drained orzo Cut the tomatoes last, otherwise the juice may collect at the bottom. Mix in a little olive oil if the salad seems too dry. Crumble the feta over the salad. Garnish with parsley.
