Indian Eggplant

Smear a big eggplant with olive oil, give it a few jabs
with a knife and roast it on a gas burner till its completly cooked inside.
Chop 2 onions, 3 to 4 garlic cloves, 1 or 2 green chillies, a couple of
tomatoes and one green bell pepper.
Heat about 11/2 Tbsp oil and put in 1/2 tsp of cumin seeds and when
it gives out a nice aroma (not blackened) add the onion garlic and
green chiilies. Saute till brown .
Add the cooked eggplant after carefully removing the skin and mashing
it. Add salt 1/4 tsp of turmeric powder, 1/2 of garam masala 1/4 tsp of
cumin powder and saute futher.
After 3 to 4 min add the chopped tomatoes and cook till the
tomatoes are softened. Squeeze 1/2 a lime and garnish with parsely or ciltrano.
We eat this with chappatis ie fresh home made wheat bread.
