Shrimp & Vegetable Lo Mein
List of Ingredients
1 Tbs oil, peanut or canola
1 cup sliced onion
2 tsp minced garlic
1 tsp minced ginger (optional)
1 cup zucchini, matchsticked
3/4 cup shredded carrots
2 cup fresh mushrooms, sliced
4 cups cooked spaghetti or fettuccini
4 Tbs soy sauce
1 cup frozen petite peas *
1 cup frozen niblet corn * )
1 lb raw shrimp, peeled and cleaned
3 scallion tops, chopped
* defrosted and drained
Recipe
Heat oil in a large wok or non-stick pan. Saute the onion, garlic and ginger until the onion is limp and translucent. Add the zucchini, carrots, and mushrooms, and raise heat to high. Cook, stirring constantly, until the carrots are bright and tender but not mushy.
Add pasta and soy sauce and mix in well. Cook for about 5 minutes.
Add the peas, corn, and shrimp. Mix in well and cook for 5-10 minutes or until the shrimp turn firm and bright orange-pink.
Garnish with scallion greens.
