    Thai Hot and Sour Shrimp Soup

    List of Ingredients

    1 pound medium shrimp, peeled
    1 Tbs vegetable oil
    1 Tbs garlic, chopped
    6 cups chicken stock, up to 7
    2 stem lemon grass, chopped
    4 kafir lime leaves
    4 slices galangal
    2 Tbs fish sauce
    1/2 cup lime juice
    2 Tbs coriander, chopped
    3 scallions, chopped
    2 chiles, seeded & sliced
    1 cup mushrooms, quartered

    Recipe

    Heat the oil then fry the garlic until it becomes crispy. Remove the garlic. Using the same oil, fry the lemon grass, galangal, and chile for 2 minutes. Add in the chicken stock and cook until it boils. Add the lime leaf and cook for another 3 minutes while adding the mushrooms and shrimps. Add lime juice, fish sauce, coriander and scallion.
