Turkey-Bean Enchiladas
List of Ingredients
1/2 lb ground turkey
1 tsp olive oil
1 (8 oz) can black turtle beans, drained
1 (8 oz) can corn, drained
1 (4oz) can green chilies, drained
1 package taco seasoning
1 (16 oz) jar picante sauce
2 cups shredded lowfat cheese
1 package corn tortillas (8")
Recipe
Preheat oven to 350 degrees. Spray a 9"x13"x2" baking pan with non-stick cooking spray.
Heat the olive oil in a small skillet.
Mix turkey and taco seasoning. Brown in skillet, drain any fat. Stir in beans, chilies, corn and 1 cup picante. Divide among tortillas, sprinkle with 1 Tbs cheese. Roll, place in baking dish. Top with remaining picante and cheese. Bake 30 minutes or until hot.
