Ginger-Glazed Salmon

Recipe Introduction
In this party-perfect entree, the fish can be marinated ahead or just before cooking.
List of Ingredients
2 Tbs chopped fresh mint
2 Tbs soy sauce
1 tsp grated lime peel
2 Tbs fresh lime juice
1 Tbs firmly packed brown sugar
1 tsp grated fresh ginger
1 tsp olive oil
1/2 tsp freshly ground black pepper
8 pieces salmon filet or steak (6 oz. each), skinned
2 cups loosely packed cilantro leaves
2 cups loosely packed fresh mint leaves
1/2 cup loosely packed fresh parsley leaves
1/2 cup sour cream
2 minced jalapeno chiles
1 Tbs fresh lime juice
1/2 tsp freshly ground black pepper
1/4 tsp salt
Recipe
Make Ginger Glaze: Combine all glaze ingredients in small bowl.
Place salmon in shallow glass dish and spoon on Ginger Glaze, turning to coat.
Heat broiler. Line jelly-roll pan with foil. Arrange salmon on prepared pan and spoon glaze on top. Broil 4 inches from heat without turning until fish is opaque throughout and flakes easily with a fork, 8 to 10 minutes. Let stand 5 minutes. Serve with Green Herb Sauce.
Green Herb Sauce: Combine cilantro leaves, mint leaves, parsley leaves, sour cream, jalapeno chiles, lime juice, black pepper, and salt in blender. Blend until smooth, scraping down sides. Makes 1-1/4 cups.
Makes 8 servings.
