Salmon Cakes

List of Ingredients
2 cups fresh bread crumbs
2 eggs, beaten
1/4 cup chopped fresh parsley
1/4 cup minced sweet onion
1 tsp fresh dill weed, or 1/4 tsp. dried
1 tsp lemon juice
1/4 tsp pepper
1 (15.5 oz) can salmon, drained
2-3 Tbs vegetable oil or margarine
Recipe
Place 1 1/2 cups crumbs in a bowl. Set aside remaining 1/2 cup crumbs. Add the eggs, parsley, onions, dill, lemon and pepper. Mix well. Add salmon. Mix with hands or a wooden spoon. Form into patties. Dip in remaining crumbs. Fry over medium-high heat for about 3 minutes per side. Add more oil or margarine if necessary.
