    Marinated Pork Loin

    List of Ingredients




    2 cloves garlic, minced
    2 Tbs chopped fresh parsley
    1 Tbs Dijon mustard
    1 Tbs water
    2 tsp dried thyme
    2 tsp dried basil
    2 tsp sugar
    1 tsp vinegar
    1/4 tsp salt
    1/8 tsp ground red pepper
    1 boneless pork top loin roast (2 lbs), fat removed

    Recipe






    In a small bowl, stir together all except pork. Place pork in a pie plate. Spread evenly with garlic mixture. Cover and refrigerate for 12 to 24 hours.

    Preheat oven to 325 degrees. Coat a roasting rack with nonstick spray and place rack in a roasting pan. Place roast on rack. Roast for 1 hour, or until a meat thermometer inserted in the center registers 170 degrees. Transfer roast to a cutting board; cover with foil and let stand for 15 minutes before slicing.

    Makes 6 servings.
