Roast Pork with Coffee Sauce
List of Ingredients
4 pounds boneless pork roast
Coarsely ground black pepper
Salt
Fresh garlic
1 orange, peeled and the juice
1 medium onion, minced
2 medium ripe tomatoes, peeled, seeded & finely chopped
2 Tbs. fresh chopped parsley
1/2 tsp. sugar
3/4 cup extra strong, coffee
1/2 bay leaf, finely crushed
1 Tbs fresh lemon juice
Recipe
Preheat oven to 300 degrees.
With a sharp knife, pierce the pork about 1 1/2 inch deep in 10 different places. Press into each hole 1/4 clove of garlic, 1/8 tsp pepper, 1/16 tsp. salt and a thin strip of orange peel.
Rub the surface of the roast with more salt and pepper and place the roast on a rack in a roasting pan.
Bake slowly, 40 minutes per pound or until the meat registers 185 degrees on a meat thermometer. Let it stand 15 minutes to cool before carving.
COFFEE SAUCE
In a frying pan heat 2 Tbs liquid dripping from the roast. Add onions and saute until tender.
Loosen crusty, not burnt drippings from the roast, add the onions, tomatoes, parsley, 1/2 tsp. salt, sugar and 1/4 tsp. black pepper. Saute for about 10 minutes or till tomatoes lose their shape. Add the orange juice and bay leaf, cooking 5 more minute until sauce is blended. Stir in the lemon juice, taste and correct with salt and pepper.
Pass sauce over the hot roast after slicing into portions.
Makes 8 serving.
