    Thyme Roast Pork

    List of Ingredients




    One 4 lb pork loin
    salt , pepper
    3 Tbs olive oil
    2 Tbs lemon juice
    1 Tbs fresh thyme or 1 tsp dried thyme
    1 garlic clove, finely chopped
    1 cup chicken stock

    Recipe



    Preheat oven to 350°.
    Combine the olive oil, lemon juice, thyme, garlic, salt and pepper. Rub the mixture into the pork. Place the roast fat side up on a rack in an uncovered roasting pan. Roast about 2 hours or 30 minutes per lb, 170° on a meat thermometer. When the meat is done, remove roast to a hot platter, pour off the fat in the roasting pan. Add stock to the pan, bring to a boil. Thicken, if desired with a little flour mixed with water.

    Serves 6.
