    Peach Mint Salsa

    List of Ingredients




    This special salsa was created to serve with grilled boneless leg of lamb.

    2 ripe peaches, peeled and diced
    1 small red pepper, chopped
    1/2 red onion, chopped
    1 small jalapeno pepper, minced
    1/3 cup pineapple juice
    2 Tbs balsamic vinegar
    2 Tbs fresh chopped mint

    Recipe



    Mix all ingredients together and refrigerate at least one hour to blend flavors. May be made a day or two in advance.

    Makes about 3 cups.
