Angel Hair with Balsamic Tomatoes
List of Ingredients
2 cloves garlic, minced
1 Tbs olive oil
28-ounce can diced tomatoes, or 3-4 cups fresh
3 Tbs balsamic vinegar
Salt, pepper to taste
2 Tbs dried basil, crushed (or twice the amount of fresh)
1 pound angel hair pasta, uncooked
Parmesan cheese
Recipe
Sauté garlic in olive oil until translucent. Do not brown. Remove skillet from the burner, leaving garlic and oil in pan. Set aside.
Pour undrained tomatoes into non-matalic bowl. Stir in balsamic vinegar, pepper and basil. Most canned tomatoes have enough salt, let stand about 10 minutes. Put on a pot of water to boil for the pasta. Drain the tomatoes into a 2 cup glass measuring cup. Microwave boil for 4 or 5 minutes. Reduce to 2/3 cup. Drop pasta into boiling water, cook just until al dente. Drain, keep warm until sauce is done. Return that skillet with the garlic to the heat, get it hot, then add the drained tomatoes and toss briefly. You want them to get HOT, not MUSHY. Toss the pasta and heated tomatoes together, then pour the reduced juices over top. Serve hot with cheese.
Goes nicely with garlic green beans and salad with Green Olive Dressing.
