Cous-Cous Supreme
List of Ingredients
1 2/3 cup water
1 cup cous-cous
2 roma tomatoes or a large handful of cherry tomatoes
1 small onion
1/2 green pepper
1/2 sweet red pepper
4-5 mushrooms
10-12 black olives
1 clove garlic
1/2 tsp salt
1 tsp pepper
1 1/2 tsp basil, oregano, or Italian seasoning
1/2 tsp crushed red pepper,optional
1 Tbs butter or olive oil
Recipe
Boil water, stir in cous-cous, cover, and remove from heat. Allow to sit for five minutes. While cous-cous soaks, dice tomatoes, onion, and peppers. Combine with remaining ingredients and saute lightly in butter or olive oil. When cous-cous has soaked up all water, combine with veggies, stir, and serve.
Variations:
Use a shallot or 4-5 scallions/spring onions instead of an onion.
Add 1/2 tsp turmeric to the boiling water to give the cous-cous a pretty yellow color.
For a more Mediterranean feel, add 1/4 cup crumbled feta or goat cheese and diced marinated artichoke hearts.
For a more Italian feel, add 1/4 cup Parmesan cheese, and use 2 cloves of garlic.
