No-Cook Tomato Sauce
List of Ingredients
3 Tbs extra-virgin olive oil
2 Tbs white wine vinegar
2-3 Tbs chopped fresh parsley
2 Tbs minced shallots or 2 scallions, sliced
1 Tbs balsamic vinegar
1 tsp minced garlic
1-2 Tbs chopped fresh basil
1/2 tsp salt
1/4 tsp freshly ground pepper
1/4 tsp sugar
2 pounds ripe tomatoes, chopped
Recipe
Whisk all ingredients except tomatoes in a medium bowl. Stir in tomatoes; let stand 30 minutes.
Makes 4 1/4 cups.
