Shrimp Scampi Viola

Makes 1 generous serving. From Vincent Ricciardeli.
6 oz. linguine
6 tiger shrimp
2 cloves fresh garlic
1 shallot
1 green onion
2 oz. dry white wine
1 pinch ground saffron or saffron threads, optional
4 oz. fresh Roma tomato
1 Tbsp. fresh basil
1 Tbsp. fresh parsley
2 Tbsp. butter
2 Tbsp. heavy cream
Cook linguine according to package directions. Meanwhile, in saute
pan, saute shrimp (tail on), minced garlic, finely chopped shallot
and minced green onion (including tender green part) until
translucent. Then deglaze pan with wine and saffron, if using. Add
diced tomato (1-2 should weigh about 4 ounces), chopped basil,
chopped parsley and drained linguine. Toss lightly and serve.
