Stir Fried Noodles
1. Cut up 1/2 pound of pork loin into pieces a little larger than a match stick
2. Prepare marinade of 1/2 cup soy sauce, 1 t. of vinegar, 1 t. of minced garlic, and 2-3 chili peppers (according to taste). Pour over pork and marinate for 20 minutes.
3. Cook 6 oz. of flat, dried noodles, drain and set aside
4. Slice or chop 1/4 of an onion, 1 cup of cabbage, and 1 carrot. Sprinkle vegetables with salt to taste.
5. Prepare 1/2 cup of beef buillion.
6. Heat 1 T. of vegetable oil until very hot. Stir pork into hot oil (reserve liquid). Stir fry pork until done (about 3 minutes). Place meat into clean bowl and set aside.
7. Wipe pan with paper towel, place pan back on heat, and add 1 T. of oil and heat until very hot. Add vegetables and stir fry 1 minute. Add beef buillion, cover and steam 1 minute.
8. Using reserved liquid, add 1 t. cornstarch; stir until smooth.
9. Remove cover from vegetables and add the pork and cooked noodles. Stir in the soy sauce and cornstarch mixture. Mix ingredients together and cook until liquid is slightly thickened.
10. Serve immediately. Makes 2 servings.
