    Sundried Tomato Pasta

    List of Ingredients




    8 oz. pasta of your choice, penne is a good choice
    4 oz. sundried tomatoes in oil
    2 cups spinach leaves, packed
    1 tsp. fresh ground black pepper
    1/2 cup mild goat cheese, crumbled

    Recipe



    Cook pasta according to package directions.
    Drain sundried tomatoes in large skillet. When somewhat drained, slice into strips. If you have less than 1 tablespoon of oil in the skillet, add more, either from the jar or a good olive oil.
    When pasta is nearly done, heat skillet on medium high heat and add sundried tomatoes. Cook for 1 minute. Add spinach and pepper and, stirring constantly, cook for 2 more minutes. Drain pasta and mix with sundried tomatoes, spinach, and oil from skillet. Top with crumbled goat cheese.

    Variations:
    Add sliced black olives.
    Add chopped marinated artichoke hearts.
    If you can't find goat cheese, use feta instead.
    Quick tip: Sunsweet sells sundried tomatoes in oil already sliced.
