    Best Curry Chicken Ever

    List of Ingredients




    3 boneless skinless chicken breasts cut into chunks
    1 large onion cut into large pieces
    4 cloves garlic minced
    2 Tbl oil (peanut is best)
    1/2 cup white wine or cooking sherry
    2 cubes beef boullion
    2-3 Tbl curry powder
    1 cup water
    1/2 tsp ginger
    1 can coconut milk
    1/2 cup creamy peanut butter
    cornstarch
    red pepper flakes

    Recipe



    In large baggie, add the cornstarch (about 3/4 cup)
    add the red pepper flakes to the cornstarch.
    Drop chicken chunks into baggie and shake til well coated.
    Heat oil in skillet, add the chicken and quickly brown, then remove to baking dish.
    In same skillet sautee onions and garlic, remove and pour over chicken in the baking dish.
    In the skillet, add the wine, water and beef cubes and simmer til liquid is reduced.
    Add the peanut butter and seasonings, simmer for about 2 min.
    Now add the coconut milk. Simmer for another 2 min.
    Pour sauce over chicken and bake for 20-25 minutes at 375 F.
    The sauce should thicken as it bakes.

    Serve with rice
