    Crunchy Chicken Salad

    3 large cooked chicken breasts, deboned, skinned and diced
    1/2 cup finely chopped celery
    2 green onion, finely chopped including part of the green
    1 cup chopped water chestnuts
    1 tablespoon finely chopped fresh parsley
    3/4 cup mayonnaise, light or regular
    1/4 cup sour cream, light or regular
    1/2 tsp. salt
    1/2 tsp. pepper
    1/2 tsp. paprika

    In a bowl combine the diced chicken, celery, green
    onion, water chestnuts and parsley. Blend in the
    mayonnaise, sour cream and season with salt,
    pepper and paprika. Cover and chill. Serve with
    croissants, fresh sliced bread or rolls.
