Fruity Chicken Salad

2 cups diced, cooked chicken breasts
1 cup finely chopped celery
1/2 cup golden raisins
1/2 cup mayonnaise, light or regular
1 tbsp. frozen orange juice concentrate, thawed
1/2 tsp. garlic powder
1/4 tsp. black pepper
1/4 tsp. ground ginger
fresh greens and cherry tomatoes
In a large bowl combine the chicken, raisins, and
celery. Add the remaining ingredients and mix.
Chill. Before serving place a mixture of lettuce
and green on each plate. Top with salad, and
garnish with 2-3 cherry tomatoes.
