Herb Basted Turkey Breast

4 pounds bone-in turkey breast, thawed or fresh
1/4 cup olive oil
3 tablespoons chopped parsley
1 teaspoon chopped fresh thyme leaves
1 teaspoon chopped fresh marjoram or oregano
1/2 teaspoon chopped lemon zest (no white)
1/4 teaspoon salt
1/8 teaspoon freshly ground pepper
Preheat oven to 350 degrees. Whisk together all the
ingredients other than the turkey until blended. Rinse
and pat dry the turkey breast and pat dry. Using your
fingers gently separate the skin from the breast. Gently
pour 2 tablespoons of the herb dressing evenly over
the breast meat. Stretch the skin back over the meat;
pinning back with several toothpicks. Place the turkey
in a roasting pan. Pour or brush the remaining dressing
over the turkey. Roast the turkey until juices run clear,
1 to 1 1/2 hours (180 on a meat thermometer). Allow
turkey to set for at least 15 minutes before carving.
