Tex Mex Turkey Salad

1/2 cup peach preserves
1/4 cup lemon juice
2 Tbsp. oil
1/4 tsp. salt
1/4 tsp. ginger
1/4 tsp. cumin
2 cups cubed cooked turkey
2 cups shredded lettuce
1/4 cup chopped cilantro
1 tomato, chopped
1 mango, peeled and chopped
1 peach, peeled and chopped
2 cans black beans, rinsed and drained
1 jalapeno chili, minced
In small bowl, combine preserves, lemon juice, oil, salt, ginger and cumin and mix well. Set aside.
In large bowl combine remaining ingredients and toss to mix. Add salad dressing and toss again. Serve immediately.
