Coconut Rice

This dish goes well with curry dishes or Indonesian vegetable and meat
dishes.
1 1/2 cups long-grain rice
2 1/2 cups coconut milk
1/2 teaspoon salt
2 bay leaves (optional)
In a heavy saucepan, bring the ingredients to a boil. Lower heat and
simmer, covered, for 20 minutes. Remove from heat and let stand,
covered, until ready to serve.
Makes 4 to 6 servings
