    Baby Greens Salad with Cheese and Fruit

    1/2 cup extra virgin olive oil
    3 tablespoons fresh lemon juice
    1 tablespoon orange juice
    1 tablespoon minced shallots
    2 teaspoons cracked green peppercorns
    1 teaspoon mustard
    1 small garlic clove, pressed
    1/2 teaspoon salt
    1/2 pound mixed baby greens
    4 oranges, peeled and sectioned
    3 avocados, pitted, peeled, and sliced
    1 cup crumbled Gorgonzola or blue cheese

    1. In a medium bowl, whisk together olive oil, lemon juice, orange juice, shallots, peppercorns, mustard, garlic, and salt until well blended and slightly frothy.
    2. Place a nest of greens on each of 8 to 10 plates. Top each with orange sections and avocado slices, then sprinkle with Gorgonzola cheese. Drizzle each salad with vinaigrette. Makes 8 to 10 servings.
