Cheesy Portobello Salad

Italian marinade: 1/4 cup
Parsley 1/4 cup
Olive oil 3 tbs.
Garlic 1 clove
Red Pepper Flakes 1/4 tsp.
Portobello Mushrooms 4
Red Pepper 1 quartered
Salt and Pepper 1/4 tsp. each
Asiago Cheese 1/2 cup shredded
Baby Greens 6 cups
Fresh thyme for garnish
HEAT BROILER. In blender, puree first 5 ingredients. Toss mushrooms and
peppers with 1/4 cup mixture, season with salt and pepper. Broil 8 min.
turning once. Remove peppers. Top mushrooms with cheese, broil 2 min. Slice.
ARRANGE GREENS ON 4 PLATES. Drizzle with remaining vinaigrette mixture. Top
with mushrooms and peppers. GARNISH WITH CHOPPED THYME.
