Creamy Cucumber Salad

List of Ingredients




4 cucumbers
1 red onion, julienned
1/2 cup mayonnaise
1/2 cup yogurt
2 Tbs sugar
1/8 cup white vinegar
1 red pepper, julienned
10 chopped fresh mint leaves
fresh mint leaves for garnish, optional


Recipe



Cut the cucumbers in fours, lengthwise and de-seed, do not peel. Slice the cucumbers into julienne. Add the red pepper and chopped mint leaves.

In a separate small bowl, combine the mayonnaise, yogurt, sugar and vinegar. Mix well to dissolve sugar and add to the cucumbers. Marinate the salad two hours before serving. Garnish with fresh mint leaves just before serving.
