Low-Fat Cousous Nicoise

1/2 lb fresh green beans, trimmed
3 1/4 cups water, divided
10 oz pk uncooked couscous
1/2 tsp salt
1/3 cup reduced-fat Italian salad dressing
12 oz tuna, flaked
2 1/4 oz sliced ripe olives
4 Italian plum tomatoes, quartered lengthwise
In medium skillet or saucepan, bring about 1 cup water to a boil.
Add green beans. Reduce heat; cover and simmer 8 to 10 minutes
until tender. Meanwhile, in medium saucepan, bring 2 1/4 cups water
to a boil. Stir in couscous and salt; return to a boil. Cover;
remove from heat. Let stand 5 minutes. Drain green beans; set aside.
Fluff couscous with fork; stir in salad dressing. Spread couscous on
serving platter; top with tuna, olives and green beans. Garnish with
tomato wedges.
