    Potato Vinaigrette Salad

    List of Ingredients




    2 pounds small red potatoes, scrubbed
    2 Tbs red wine vinegar
    1 Tbs Dijon mustard
    1 tsp salt
    1/2 tsp freshly ground black pepper
    2 Tbs olive oil
    1/4 cup minced shallots or red onion
    1 cup finely chopped celery
    1/4 cup chopped fresh parsley

    Recipe



    Boil potatoes in salted water, just until tender, 15 to 20 minutes. Drain. Cool slightly, dice. Whisk vinegar, mustard, salt and pepper in large bowl. Whisk in oil. Add shallots and warm potatoes, toss, Cool. Stir in celery and parsley.

    Makes 12 servings.
