Sauerkraut Salad
List of Ingredients
1- 16oz can sauerkraut, drained
1- 15oz can garbanzo beans, drained
1- 2oz jar diced pimiento, drained
1 cup chopped onion
1 cup chopped celery
1/2 cup sugar
1/2 cup vinegar
1/2 cup vegetable oil
lettuce leaves
Recipe
Combine sauerkraut, beans, pimiento, onion, and celery in a large bowl and set aside.
Combine sugar and vinegar in a saucepan; bring to a boil. Stir in oil. Remove from heat. Pour over sauerkraut mixture. Cover and chill overnight.
Serve on a bed of lettuce.
Makes 6 servings.
