    Summer Tomato Salad with Brie

    List of Ingredients




    5 medium fresh tomatoes, cut into chunks, save juice
    1/2 lb Brie chees, rind removed, torn into pieces (freeze the Brie for 20 minutes to remove rind)
    1/2 cup fresh basil, snipped into strips with scissors
    3 large garlic cloves, minced
    1/3 cup olive oil
    1/2 tsp salt
    1/2 lb fresh pasta
    1/2 cup freshly grated Parmesan

    Recipe



    Combine tomatoes & juice, Brie, basil, garlic, olive oil and salt. Leave at room temperature at least 2 hours. Cook pasta as directed on package. Drain, immediately toss with tomato mixture. Brie should melt. Mix. Sprinkle with Parmesan. Add more salt to taste. Serve at room temperature

    Serves 6-8
