    Bratwurst with Kraut and Onions

    2 tablespoons peanut oil
    2 pounds fresh bratwurst links
    2 medium yellow onions, chopped
    2 large garlic cloves, minced
    2 cups rich beef stock
    1 teaspoon paprika
    4 cups sauerkraut, drained
    2 fresh baked baguettes

    In a large heavy skillet, heat oil over high heat. Brown bratwurst in
    the oil and reduce the heat to medium. Add onions and the garlic and
    cook until lightly caramelized (browned).

    Add stock, paprika, and sauerkraut and simmer for 30 minutes. Remove
    from heat and serve on 4 inch lengths of baguette.
