    List of Ingredients

    3/4 lb Roma tomatoes, diced
    1/2 cup fresh minced parsley
    1 green onion, thinly sliced
    2 cloves garlic, minced
    1/2 cup grated Asiago cheese
    2 TBL olive oil (the greener the better)
    1 TBL lemon juice
    1 tsp sugar
    1/2 tsp salt
    1/4 tsp pepper
    One 8 oz loaf French bread
    1/4 cup olive oil

    Recipe

    Combine all ingredients, except bread & 1/4 cup olive oil. Chill mixture several hours or overnight. Bring mixture to room temperature before serving. Spoon onto toasted rounds of bread.

    To toast bread, heat oven to 350°. Cut bread into 3/4" slices. Brush both sides w/olive oil. Toast in oven for 12-15 minutes, turning halfway through baking time.

    Optional: Just before serving, add some fresh torn basil leaves.
