Italian Meatball Soup
List of Ingredients
1 pound lean ground beef (or ground turkey)
1/2 cup crushed crackers
1 egg
1/4 cup water
1 1/2 tsp. Italian seasonings
1/2 tsp. salt
1/4 tsp. pepper
2 cans chicken broth
1 can diced tomatoes (14 ½ oz)
½ cup small pasta (shells, bowties)
3 ½ cup chopped fresh spinach (5 oz)
¼ cup Parmesan cheese
Recipe
Mix first 7 ingredients well and shape into 1 1/4 inch meatballs. Place in a shallow pan sprayed with non-stick cooking spray. Bake for 10 minutes. Meanwhile, in large saucepan, combine broth and tomatoes, bring to boil. Add pasta, bring to boil, cover, simmer 5 minutes, or until pasta is tender. Remove from heat and add spinach. Let stand 2-3 minutes. Serve with cheese sprinkled over top.
