Tomato Soup
List of Ingredients
8 medium tomatoes, quartered (about 3 lbs.)
2 cups water
1 cup vegetable broth
1 large onion, peeled and halved
1 tsp. sugar
1/2 tsp. salt, or to taste
Recipe
In a 4-quart pot, combine the tomatoes, water, broth and onion. Bring to a boil. Reduce heat and simmer, uncovered, one hour. Stir in sugar and salt.
Place the soup in a blender and let 'er rip! Heat and eat!
You can also add fresh herbs 15 minutes before it's finished cooking. Use 1/2 cup chopped fresh basil, parsley, or dill. For stronger-flavored herbs, use 2-3 tablespoons of frsh thyme, rosemary, chervil or savory.
