Spinach Marinara Sauce

Recipe Introduction
Serve over whole wheat pasta.
1/4 cup olive oil
1 onion, chopped
3 cloves garlic, minced
1/3 cup grated carrot
10 oz frozen chopped spinach, thawed, drained
12 oz tomato paste
8 oz mushrooms, sliced
2 Tbs salt
2 Tbs oregano
2 Tbs dried basil
1 Tbs crushed red pepper or to taste
28 oz can peeled and crushed tomatoes with liquid
Conventional: Saute onion in oil until soft, add garlic; cook and stir for 3-4 minutes. Add remaining ingredients; cover and simmer 1 hour, or until thick enough to serve over pasta.
Crockpot: Combine all ingredients in crockpot. Cover, cook on LOW for
6-7 hours.
