5 Minute Low-Fat Tiramisu

1 lb. low-fat ricotta cheese
1 egg
1-2 oz rum
1/2 tsp vanilla
1 cup sugar
1/2 cup strong coffee
1 pk. ladyfinger cookies
1/2 tsp cocoa
Combine first five ingredients in food processor and blend until smooth. Arrange ladyfingers on bottom of a 9x13" baking dish. Drizzle with 1/4 cup coffee. Spoon half cheese mixture over top. Repeat with second layer. Dust top with cocoa. Refrigerate 4 hours until firmly set.
