Algerian Carrots

2 3/4 lb. carrots, slice diagonally
1/2 tsp hotsauce
2 Tbs olive oil
3 garlic cloves, thinly sliced
1 lemon juiced
2 tsp toasted, crushed cumin seeds
1/2 tsp salt
1/2 tsp sugar
2 Tbs fresh mint leaves, chopped
Steam carrots for 5 minutes, until tender-crisp. Mix 5 Tbsp. cooking water hot sauce. Heat oil over medium heat. Add garlic, water/hot sauce, lemon juice, cumin, salt, sugar and carrots. Loosely cover and simmer over medium-low heat 10 minutes until liquid is reduced. Stir in the mint and serve at once.
