Crockpot Ratatouille

List of Ingredients
1 cup sliced onion
1 large eggplant, sliced
4 small zucchini, sliced
2 garlic cloves; minced
1 medium bell pepper, cut into thin stips
6 large tomatoes, 1/2" wedges
1 tsp basil
2 Tbs parsley; chopped
1/4 cup olive oil Recipe
Layer all vegetables in crockpot. Sprinkle on basil and parsley. Salt and pepper to taste. Drizzle with olive oil. Cover, cook on LOW 7-9 hours.
