6 medium potatoes (about 2 cups when cooked and diced)
1 3/4 cups light cream
3/4 cup grated cheddar cheese
1/2 cup buttered bread crumbs
4 Tbs butter
4 Tbs flour
salt and pepper to taste
Recipe
Preheat oven to 400 degrees. Butter baking dish.
Boil potatoes in lightly salted water until almost done. Drain and peel and dice. Place in baking dish. Combine flour and butter in a saucepan over a low heat. Mix into a roux. Slowly add cream, stirring constantly. Simmer until thickened. Season with salt and pepper. Pour over potatoes, toss to coat. Cover with cheddar cheese and sprinkle with bread crumbs. Bake until cheese is golden brown.
