Eggplant Au Gratin
List of Ingredients
4 small eggplants
1 large onion, chopped
2 eggs, beaten
8 oz. sharp cheddar cheese, grated
2 Tbs butter
1/2 cup bread crumbs
Salt and pepper to taste
Recipe
Wash and dry whole eggplants and pat dry. Slice in half vertically and brush with vegetable oil. Bake in moderate oven (350 degrees) until fork tender. Scoop out contents of each half and place in mixing bowl. Allow to cool slightly.
With a potato masher or fork mash the eggplant. Combine with the egg, grated cheese, onion, salt and pepper.
Sprinkle breadcrumbs in bottom of medium casserole. Pour eggplant mixture into casserole. Dot with butter and return to oven. Bake at 350 degrees until slightly browned.
